Healthy Anti-Inflammation Drink: Coffee with Milk

The combination of proteins and antioxidants doubles the anti-inflammatory properties of immune cells. When bacteria, viruses, and other foreign substances enter the body, our immune system reacts by using white blood cells and chemicals to protect us. This reaction, commonly known as inflammation, also occurs when tendons and muscles are overworked and is common in diseases such as rheumatoid arthritis.

Antioxidants known as polyphenols are found in the human body, plants, fruits and vegetables. This group of antioxidants is also used in the food industry to slow down the oxidation and deterioration of foods, thereby preventing off-taste and rancidity. Polyphenols are also known to be beneficial to humans as they help reduce oxidative stress that causes inflammation in the body.

But there is still a lot of unknown about polyphenols. Relatively few studies have examined what happens when polyphenols react with other molecules, such as proteins, which are then mixed with the foods we consume.
